I want to host a server, where I can add/create channels as I wish, etc. How would I go about doin this? I'm pretty noob I know basic IRC stuff, but which would be the easiest way?

a) Rent a Shell server that will let you host ircD's.
b) Research ircD's. Unreal is one of them.
c) Follow the instructions for whichever daemon you're using.

If your using windows I think something called wirc srv or wircsrv something like that might be what you want

or

If your a linux user theres
Unreal ircd as stated before

Hyrbrid could be another option and there is good documentation,
