Can't they be upped somewhat? 500 and 15 characters are pretty low, really. I understand the design constraints in the 15-character limit, but surely 20 wouldn't be asking for too much. Signatures are a stickier issue but people like me who end up using lots of markup in their signatures are kind of SOL if they want to have a decent-sized signature. Mods can trim down signatures in vB3 if they're problematic anyway.

I'm not really sure about the signature limits, but for the rank/custom title limits, I'm pretty sure that if we increased it a number of characters more, it would maximize the size of the tables. In other words, it would change it size.

I don't think there's a "nowrap" element in the table, so it'd just wrap onto another line. It wouldn't be as attractive as having everything on the same line, but it would afford users more freedom as per what they could put in their profile. I'm going to test something out.

Edit: Okay, yeah, there's a nowrap element after all. I think they should get rid of it, personally. xD

I completely agree. Something was going to be done about this before the last downtime if I remember rightly. I think changing them to 1000 and 25 would be better to be honest.
