The rule of the single job challenge is that you must go through all of FF5 with everyone in the same job. They cannot equip abilities from other jobs, with the following exceptions:

Dash (Thief)
Find Passages (Thief)
Find Pits (Geomancer)

These abilities are allowed, because they only assist in moving around the map. You will need to use a code or save state editor to gain access to jobs that you don't get at the Wind Shrine. (I use a code so that I can use the job even before the Wind Shrine.)

Obviously, some jobs are easier to use than others. Jobs that can do a lot of damage, such as Knights, Samurai, Ninja, and Black Mages, and "Freelancers" (no job) are relatively easy. (Even though Freelancers don't have any special skills, they can use all equipment, which is more of an advantage than you think.)

Jobs like White Mage are intermediate in difficulty. Initially, they lack powerful offensive abilities, but once you learn the Holy spell, it becomes much easier. Other intermediate jobs include anyone with moderate offensive ability, such as Red Mages and Rangers.

The hardest job is arguably the Thief job, which I have half-heartedly attempted. (I stopped after I beat Liquid Flame on the Fire-Powered Ship, and that took me a few tries at average levels.) What makes this class difficult is that it lacks both melee damage potential and magic, and all of its stats are poor with the exception of Agility. Its only assets are running away (which is a double-edged sword) and stealing (which is only moderately useful when you can't equip much of anything).

Berserker is another challenging job, simply because you can't control your units. However, there is little strategy in doing an all-Berserker party, because you can only watch.

All white mages looks a little boring.

Final Fantasy V is one of my favourite, but I've never had the incentive to go out of my way to do a challenge in any Final Fantasy.

This might be a nice place to start.

idk michael... these can be a real pain. to make it hard do a single class lowlevel game

If I were to choose one class I'd probably go with all monks. They can heal to a small extent and their physical damage output can be amazing. Their natural HP bonus could help as well.

I usually choose single-class challenges for difficulty. If I had to pick an ideal class, it would be one of the heavy physical fighters, such as Knights, Samurai, or Ninja. The Monk would not be too bad, but they do take a lot of damage due to their limited armor options.
