I'm going to have to say "The Real Folk Blues" from the ending of Cowboy Bebop. That song is just so sad! Listen to the translation and then watch the series! tear jerker! *^_^*

I would say "Unstolen Jewel" by Radical Dreamers (actually, Yasunori Mitsuda, the guy who composed xenosaga's music) : Ending theme of Chrono Cross.
The guitar part is concise, beautiful and the vocals are absolutely poignant. Check it out.
